I am Heena Patel, chef and owner of Besharam.
The word Besharam translates to “shameless” in English. It is an homage to my culture, my cuisine, and myself. In both my business and career trajectory, I want to serve as an example that it is never too late to go after what you want to achieve in your life. There is no template for someone like me without an industry-specific education or family ties to open a restaurant at my age; there is only a steep learning curve. Early on, when building Besharam, I was aware I had little room for error, which is why I am thankful of Full Heart Hospitality. Jason Rose worked alongside me at each stage of my business. His expertise in organizing kitchen spaces, writing recipes and menus were instrumental. But more than the pragmatic work, Jason Rose shared personal encouragement when I needed it. I will be 54 years old this year and I worry each business decision I make could be my last in the restaurant business.
